Organic Sushi Rolls

Seaweed is a complete source of bio-available trace minerals and high in natural iodine which supports healthy thyroid functioning. Many mushrooms are known for their phyto-chemical properties which are used in Chinese medicine for enhancing immune response. 


Sushi Rice:

Ingredients:

2 cups cooked sushi rice, any rice, or quinoa

½ cup rice vinegar

1 tablespoon vegetable oil

1 teaspoon stevia or another natural sweetener

1 teaspoon salt


Instructions:

Combine the rice vinegar, vegetable oil, stevia, and salt. Drizzle mixture over the cold cooked rice and mix. This amount makes 2-8 sushi roll pieces.
Note: Organic Thai Jasmine rice takes two minutes to cook in the microwave and can be used as a fast substitute.


Sushi Filling:

Ingredients:

(The combination of ingredients may include the following depending on the seasonal vegetables and proteins.)

3 oz. enoki, button, or shitake mushrooms / cooked prawns, crab, fish or cooked spiced tofu

4 green onions

1 large cucumber 

1 large carrot

1 large avocado

¼ pound of cooked asparagus

2-3 roasted organic Nori seaweed sheets

Instructions:

Cut the vegetables into thin long strips (julienne). Wrap your bamboo mat with plastic wrap. Lay the Nori with the shiny side down. Take a large handful of warm rice. With a fork press and spread the rice evenly to completely cover the Nori sheet. Arrange the filling in a line across the middle of the rice. Start rolling the sushi in a nice round even roll. Cut into about 6-8 pieces about 1 inch wide. Arrange on a plate and garnish with fresh greens.


Wasabi Soy Dipping Sauce

Ingredients:

½ teaspoon wasabi powder 

4 tablespoons tamari, soy sauce or Braggs Liquid Amino Acid.

Instructions:

Mix wasabi powder with tamari, soy sauce or Braggs Liquid Amino Acid. Use as a dipping sauce.

Spicy Asian Cream Dipping Sauce

Ingredients:

3 tablespoons organic mayonnaise

2 tablespoons hot water 

½ - 1 teaspoon siracha sauce or wasabi powder to taste

½ teaspoon soy sauce

½ - 1 teaspoon sesame oil

¼ teaspoon stevia

½ teaspoon tamari or Braggs Liquid Amino Acid


Instructions:

Mix organic mayonnaise, hot water, siracha sauce or wasabi powder, soy sauce, and stevia, tamari, or Braggs. Drizzle over cut sushi rolls.
