Thai Style Fresh Veggie Rolls

Fresh Thai Rolls are a power packed way to eat fresh vegetables with herbs that are full of vitamins, minerals, and enzymes. Great way to get kids to eat vegetables. 


Ingredients: 

(This can be seasonal depending on what is available at the store.)

1 cup shredded raw carrots

1 cup shredded raw beets 

1 cup red cabbage or radicchio

1 cup arugula

1 bunch of fresh cilantro (approx. 3 oz.)

1 bunch of fresh mint (approx. 3.5 oz.)

4-5 rice papers



Instructions:

Grate the carrots and beets. Shred the cabbage or radicchio. Cut off the cilantro stems. Take mint leaves off the stems. 

Fill a large plate with hot water. Soak a single rice paper in the hot water about 10-30 seconds until it is completely soft and flexible. Lay out a piece of saran wrap or wax paper on a flat surface. Gently shake the excess water from the rice paper and lay it out onto a surface covered with saran wrap. Lay the grated vegetables and herbs down in the middle of the wrap. Try to keep the fillings laid neatly, making sure to leave ample room on each side to easily fold the wrap. 


Rolling:

Lift the side of the rice paper that is closest to you, gently pull it forward and lay it over the fillings. Each side of the rice paper needs to be folded over the top and then continue rolling to close the roll. With a very sharp knife cute the roll diagonally in the middle and arrange on the plate with the dipping sauces in a small bowl. Garnish with cilantro and mint leaves. 

Makes 4-5 rolls and 8-10 cut pieces. 2-4 pieces per person is a good appetizer size.  

Spicy Nut Butter Dipping Sauce


Ingredients:

4 tablespoons room temperature peanut, cashew, or sesame butter

5 tablespoons hot water to thin the nut butters

½ tablespoon fresh grated ginger or ½ teaspoon ginger powder (fresh ginger is nicer)

½ teaspoon green onion thinly chopped

1 tablespoon soy sauce

1 teaspoon of dark roasted sesame oil

½ teaspoon of stevia or another natural sweetener

Optional: ½-1 teaspoon red chili flakes


Instructions:

Combine all ingredients in a bowl and whisk vigorously. Makes approximately ½ of sauce. Add or subtract ingredients according to your preference. 


Sweet and Spicy Dipping Sauce

Ingredients:

5 tablespoons black current or plum preserves

4 tablespoons hot water

½ tablespoon fresh grated ginger or ½ teaspoon ginger powder (fresh ginger is nicer)

½ teaspoon green onion thinly chopped

1 tablespoon soy sauce

1 teaspoon of dark roasted sesame oil

½ teaspoon of stevia or another natural sweetener


Instructions:

Combine all ingredients in a bowl and whisk vigorously. Makes approximately ½ cup of sauce. Add or subtract ingredients according to your preference.
