Cherries in the Snow

Yogurt contains acidophilus which is beneficial for the colon. Cashew nuts are

high in essential fatty acids and protein. Cherries are a low sugar fruit and are full

of natural antioxidants.

Ingredients

8 oz. of Greek yogurt

8 oz. bag of frozen organic tart cherries

1 1⁄2 teaspoons vanilla extract

1 tablespoon of orange zest 1/2

1/2 cup pecans stevia to taste

Instructions

Mix 1 to 3 teaspoons of stevia and 1 1⁄2 teaspoons of vanilla extract into 8 oz. of

Greek yogurt. Grate 1 tablespoon of orange zest. Take 8 oz. of frozen cherries and

heat in the microwave for 2 minutes. Mix the orange zest and cherries together.

In a parfait glass, put a 1-inch layer of yogurt and cover with 1-inch layer of hot

cherries, cover the berries with 1⁄2 inch layer of cashew cream. Add another layer of

hot cherries and finish with yogurt. Top with a few cherries for color. Serve in a

parfait glass immediately so that the cherries are still warm. Makes 4-6 servings.

Cashew Cream

Ingredients

4 oz. of cashews

1 -11⁄2 teaspoon of vanilla extract

stevia to taste

Instructions

Soak the 4 oz. of cashews in water overnight and rinse thoroughly. Add an equal

amount of fresh water to nuts and put in blender. Blend for about 1-2 minutes, until

smooth and creamy. Add the 1-1 1⁄2 teaspoons of vanilla extract, and the stevia to

taste.
